Ginger Cream Cookies (Sandy J.)

Ingredients:
• 3/4 cup Crisco
• 3/4 cup margarine
• 2 cups white sugar
• 2 eggs
• 1/2 cup molasses, light or dark
• 4 cups flour
• 4 tsp. soda
• 1 tsp. salt
• 2 tsp. cinnamon
• 2 Tbl. ginger
• 1/2 cup granulated sugar to roll dough in
Method:
1. Cream crisco, margarine and sugar. Mix eggs and molasses.
2. Add flour, soda, salt, cinnamon and ginger. If dough is too soft, chill before
spooning out.
3. Roll each spoonful of dough in granulated sugar then place on ungreased
foil - covered cookie sheet.
4. Bake at 350 degrees for 9 - 12 min.
5. Do not over bake. This is a soft centered cookie, not a gingerbread for
decorating. Cookies will flatten and crackle on top while baking.
Makes about 4 - 5 dozen depending on size.

Dream Bars (Kris B.)

Crust: 1/2 cup butter, softened
1 1/2 cups flour
1/2 cup sugar
pinch salt
2 egg yolks
1/2 tsp. vanilla
Mix ingredients together and press into ungreased 9 x 13” pan.

Beat stiff: 2 egg whites
Add: 1 cup brown sugar, 1 cup chocolate chips and/or nuts
Spread eggs over top of crust.

Bake: 350’ 20 minutes.

Lime Drink (Kris B.)

2 cups ice
2 limes (cut in quarters)
2 cups water
1/2 cup sugar
2 T sweetened condensed milk

Place all ingredients in blender and mix (pulse) so that ice is still chunky and limes are pulverized. Strain the contents of mixer and serve in cup with shaved (finely crushed) ice.
