No Bake Cake Balls (Allyson)
Mix: 1/2 cup unsalted butter- softened
1/2 cup sugar
Add: 1 1/2 cups flour
1 tsp vanilla
1/8 tsp salt
1 cup cake mix
Add: 3-4 Tbsp milk
Optional: 2 Tbsp spinkles
Make balls and refridgerate for 15 minutes. Can dip chilled balls in powdered sugar, sugar or in melted chocolate.

Apple Cake (Kris)
2 cups sugar
1/2 cup soft butter or margarine
2 eggs
4 unpeeled, shredded Granny Smith apples
2 cups flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 cup chopped nuts, optional
Cream sugar and margarine. Add eggs and beat well. Mix in apples, dry ingredients and nuts. Bake in greased 9 x 13 pan. 350' for 45 minutes.
Sauce:
3/4 cup butter or margarine
2 cups sugar
1 cup evaporated milk
3 tsp. vanilla
Melt butter, add sugar and milk. Heat on low 10-15 minutes or until slightly thickeded. Do not boil. Add vanilla and remove from heat.
Serve warm over cake.

Cheesecake (Kylie)
Ok, this is for cheesecake in a 9x13 pan:

Crust: (homemade is best!)
2 packages of crushed graham crackers (there are usually three in a box of graham crackers, so 2/3 of a box of graham crackers)--I crush them in a gallon zip lock back with my dough roller. Just pound the hell out of those graham crackers!
1/3 c brown sugar
1/2 c melted butter
Mix crust ingredients together and press into ungreased pan.
Filling:
2 packages cream cheese
2/3 c lemon juice
2 tsp vanilla (vanilla bean paste makes a great difference in the flavor and look of the cheesecake)
2 cans sweetened condensed milk
Mix filling ingredients in a blender. I suppose you could just beat them, but I've never tried that since the blender is so easy. Pour over crust. Refrigerate 3+ hours.
I didn't make a raspberry or strawberry topping, but you could easily whip that up and have it as an option for your guests. Enjoy!

Chocolate Bundt Cake (Kris B.)
1 chocolate cake mix
Beat cream cheese, sugar and egg yolks until smooth. Prepare cake mix as directed except substitute 2 eggs whites and 2 whole eggs for the 3 eggs. Pour half the cake batter into greased and floured bundt pan. Spoon cream cheese mixture into center of ring. Pour remaining batter carefully over the top. Bake as directed in 350’ oven. Top with cream cheese or sour cream frosting.

Ginger Cream Cookies (Sandy J.)
Ingredients:
• 3/4 cup Crisco
• 3/4 cup margarine
• 2 cups white sugar
• 2 eggs
• 1/2 cup molasses, light or dark
• 4 cups flour
• 4 tsp. soda
• 1 tsp. salt
• 2 tsp. cinnamon
• 2 Tbl. ginger
• 1/2 cup granulated sugar to roll dough in
Method:
1. Cream crisco, margarine and sugar. Mix eggs and molasses.
2. Add flour, soda, salt, cinnamon and ginger. If dough is too soft, chill before
spooning out.
3. Roll each spoonful of dough in granulated sugar then place on ungreased
foil - covered cookie sheet.
4. Bake at 350 degrees for 9 - 12 min.
5. Do not over bake. This is a soft centered cookie, not a gingerbread for
decorating. Cookies will flatten and crackle on top while baking.
Makes about 4 - 5 dozen depending on size.

Lime Drink (Kris B.)
2 cups ice
2 limes (cut in quarters)
2 cups water
1/2 cup sugar
2 T sweetened condensed milk
Place all ingredients in blender and mix (pulse) so that ice is still chunky and limes are pulverized. Strain the contents of mixer and serve in cup with shaved (finely crushed) ice.
